Tasting Notes:
The wine has a beautiful bright translucent color and a wonderful red fruit-filled nose with endless complexity. On the palate, the wine has an inner fruit power, alcohol and fruit on top, the tannings are soft and firm, with perfect acidity, enhancing the purity of the fruit, and a wonderful length on the finish. The silky tannins make this a wine that will age wonderfully.
Vineyard Notes: The 2016 growing season was warm yet moderate—steady and very manageable from a viticultural standpoint. After a fairly dry winter, Mother Nature provided some much-needed rain early in the season, with our Sabina Estate Vineyard receiving a total of 18 inches. Overall this was a beautiful vintage.
Winemaker Notes:
The vineyard was hand-harvested in 3 blocks. Fermentation lasted 15 to 22 days. Each lot was fermented separately, and then blended, followed by 24 months of aging in a barrel. The wine was bottled and aged for an additional 14 months. The wine was monitored for flavor and tannin profiles throughout the 36 months of aging.
