For the first time at Sabina Vineyards, we're offering estate grown olive oil! From trees planted in the mid 1800s by Dr. Bale to line the road to his grist mill, we harvested our olives this past November, 2024. The olives were crushed and processed at the Olivino facility at Terra Sávia, a certified organic facility located in Hopland, California. 

It's vibrant and full of character, with a fresh, crisp profile. Our small-batch olive oil boasts a fruitier, greener intensity, layered with hints of freshly cut grass, peppery spice, and buttery smoothness that perfectly balances its earthiness—ideal for finishing dishes, dipping with artisanal bread, and, of course, pairing with wine. Rooted in history, it carries a true sense of place—our sun-drenched vineyards, 175-year-old olive trees, and the rich California soil—delivering a depth of flavor that’s both distinctive and versatile.
